Behind the Menu: Our Winter Seasonal Ingredients

Every time the season changes, so does our menu. Winter is one of our favourite times to cook at The Rustic Fork — the cold weather brings some of Australia's most prized ingredients to their peak.

**Victorian Black Truffle**
We partner with Perigord Truffles of Tasmania and the Manjimup region in WA. This winter, a silky truffle custard tart with aged parmesan will anchor our entrée section.

**Mornington Peninsula Lamb**
Our lamb supplier runs a small mob of 400 on coastal pastures. The meat is extraordinarily sweet. Expect slow-roasted shoulder with anchovy butter and pearl onions.

**Murray Cod**
Wild-caught Murray Cod from the Riverina. We rest it on the crown, serve it with cultured butter, fermented leek and smoked oyster cream.

**From the Cellar**
Our sommelier has paired each course with natural wines from small Australian producers — including an orange Riesling from Eden Valley that's become a staff favourite.
